A Vibrant Green Bounty
Sweet potato leaves add a splash of color and variety to your meals. These medium to large leaves have a distinctive heart shape (cordate) with pointed tips. They grow in an alternating pattern along the vine. Depending on the variety, the leaves can be smooth (entire) or have multiple lobes (palmate).
The color palette of sweet potato leaves is impressive, ranging from deep green to a vibrant yellow-green or even purple. The top surface is typically darker than the lighter underside. The leaves sprout from slender, green stems that rise from long, creeping vines, some reaching up to four meters in length.
The good news is, you don’t need to be a climber to enjoy them! The most delicious part is the top ten centimeters of the leaves and stems, which are also the most tender. These young shoots are what’s typically consumed.
While raw they might have a hint of bitterness, cooking transforms them. They become a versatile ingredient, taking on a mild, slightly sweet flavor reminiscent of spinach or water spinach. So, the next time you’re looking for a new and colorful addition to your dish, consider the potential of sweet potato leaves.
